The 3-Piece airlock is the best choice for primary fermentation, since it comes apart for easy cleaning if you have of a blow-off. Fill to the line with boiled water, sanitizer, or alcohol (e.g. vodka) to create a closed fermenting system that allows CO2 to escape, but does not allow air back in to contaminate your beer or wine.
